The rickey is a gin or bourbon-based highball with lime juice and carbonated water. The rickey contains little or no sugar. Bartender George A. Williamson made it with bourbon in Washington, D.C.'s Shoomaker's saloon in the 1880s, allegedly in partnership with Democratic lobbyist Colonel Joe Rickey. A decade later, when it was blended with gin, it became even more popular.
