☀️ After the haul, I enjoy my red lentil pancakes on the balcony with a creamy tahini-lime-peanut sauce 🥞🌱—a recipe you didn’t know you needed but will never forget. I film my What I Drink In A Day (spoiler: a lot), and head off to Magnus' for the YouTube premiere of his Mexico travel vlog.

From Pancakes to Power Tools: A Random Vegan Day in Stockholm

🌞 I made red lentil pancakes for breakfast... then the sun disappeared. IKEA let me down. But my cumin salad dressing? It SLAPS. Oh, and I fix my closet too. Welcome to the most random but fabulous day in my life!

✨ Lemony Maple Cumin Dressing ✨
Bright, tangy, a little sweet, and smoky—this vegan dressing is the hero of my kitchen right now.
🍋 Juice + zest of 1 lemon
🍁 1 tbsp maple syrup
🫒 2 tbsp olive oil
🧂 1 tsp salt
🌿 1 tsp cumin

I layer it over lettuce, fresh dill, cilantro, and basil 🌿💚 The result? A crunchy, fragrant, flavor bomb that turns even a lazy weekday into a five-star meal ✨

Then I fix my walk-in closet—drilling, screwing, and sawing included 🛠️🧰—to add a pants-hanging bar (because vertical space is chic).

Later, I reveal my bleached tee (with the text “I can’t even think straight” 😆), enjoy peanut puffs and wine on the balcony, and just take it all in as the summer sun finally returns 🌇🍷
