Traditional Irish Champ Made Simple
22 ounces/675 grams peeled and quartered floury potatoes, such as russets
(to taste) sea salt
1 cup chopped green onions
50 to 75 milliliters/2 to 3 ounces milk
55 grams/2 oz. salted butter
black pepper, freshly ground, to taste
