Pizza salad is a collective name for the cabbage salads (see coleslaw) that are served as an accessory in Swedish pizzerias. Shredded cabbage, oil, vinegar, salt and black pepper are common ingredients and also red pepper. The pizza salad is usually left to stand for a few hours or longer in the refrigerator before it is served. It is stored cool and then the shelf life is up to a week. If it contains peppers, the shelf life is 3-4 days. [1]
In 1969, Pizzeria Piazza Opera was opened on Gustav Adolfs torg in Stockholm by the entrepreneur Giuseppe "Peppino" Sperandio. The idea to serve a free salad with pizza was also born there. [2] When Sperandio needed a cheap and filling salad to eat while baking the pizza, he remembered the salad "kupus salata" from his childhood in northeastern Italy, a salad from neighboring Croatia
RECIPE
550 grams of shredded Cabbage (About a quarter of a cabbage)
1 tsp salt
0,5 dl Canola (Rapeseed) oil
2 tblsp white wine vinegar.
Mix alla the ingredients. It get’s better if you let it stand for a couple of hours.
