Cozy Vegan Pangrattato Pasta with Lemon, Crispy Breadcrumbs & Vegan Bacon

Vegan Pangrattato Pasta

Serves 1

This is comfort food with a crispy twist—a lemony tangle of spaghetti topped with golden, garlicky breadcrumbs and smoky vegan bacon. It’s simple, bold, and totally satisfying. Best served fresh and warm, straight from the pan to your plate.



Ingredients

  • 75g spaghetti

  • Olive oil

  • 100g vegan bacon (sliced or chopped)

  • 50g coarse, stale breadcrumbs (or panko)

  • ½ tsp chilli flakes

  • Juice of half a lemon



Method

  1. Cook the pasta: Bring a pot of salted water to the boil and cook the spaghetti according to the packet instructions. Drain and set aside, reserving a splash of the pasta water.

  2. Crisp the vegan bacon: While the pasta cooks, heat a drizzle of olive oil in a frying pan over medium heat. Add the chopped vegan bacon and fry until golden and crispy. Transfer to a plate and keep warm.

  3. Make the pangrattato: In the same pan, add a bit more olive oil if needed, then tip in the breadcrumbs and chilli flakes. Stir well to coat and cook, stirring occasionally, until the crumbs are deeply golden and crisp.

  4. Finish and serve: Toss the drained pasta with the lemon juice and a touch of reserved pasta water if it needs loosening. Stir through the crispy vegan bacon, then pile the pangrattato generously on top. Serve immediately.

What if hot dogs were haute cuisine? 🌭✨


Throwback to the *very first* photo on my iPhone—and it's a good one! 🤳📸 Taken on September 17, 2024, at one of my absolute favourite restaurants in Stockholm: **BANGER** on Mäster Samuelsgatan 19. 🍴🔥 This place takes street food classics and turns them into *next-level comfort food*—seriously, you haven’t lived until you’ve tried a Brat Banger on a pretzel bun with chimichurri ketchup and crunchy roasted onion. 🤤



The star of the photo? My fabulous friend Git 💁‍♀️—blonde bob, pink leopard-print shirt, black leather biker jacket, and iconic glasses—mugging for the camera while devouring a hot dog like a rockstar. 🤓💅 We had the *full spread* that night: tater tots 🥔, spoon-shaped crunch dippers 🍟 perfect for sauce-dipping, and loaded dogs with all the wild toppings you can dream of. From surkål to hoisin sauce, from coriander to green chili—this was *hot dog heaven*. 😍🌶️🥒



 Featuring: Git, me (shaved head, beardless and hungry), and the overloaded vegan hotdog I proudly held up like a trophy. 🌱🏆 That bun? Pretzel perfection. That flavour? Unmatched. 🤯


We were headed to a book signing later that evening 📚, but honestly, the real story was told right here at the table. Laughter, carbs, sauce-splattered shirts, and joy in every bite. 😂❤️



This photo means more than just food—it’s a snapshot of friendship, fun, and flavour. A reminder that sometimes the best memories are made over shared meals in buzzing spots like BANGER. 💥

What if a single plate of food could take you back home? 🍽️✨

This is the oldest photo on my phone, taken on August 9, 2024, on the patio of my parents’ house in Mörbylånga, a charming village on the Swedish island of Öland 🌾🏡. It features a plate of Öländska kroppkakor, a traditional Swedish dish that immediately transports me to childhood memories and cozy family meals.  



Kroppkakor are Swedish potato dumplings, often stuffed with onion and spiced soy protein (traditionally pork) and served with lingonberry jam, melted butter, and cream 🥔🧈🍓. On Öland, this dish is a staple, and as seen in the photo, it's served in the classic way. However, in my case, everything on the plate is vegan – the dumplings, the butter, and the cream, making it a perfect mix of tradition and plant-based innovation.  


The setting captures a warm late summer afternoon, with golden sunlight filtering through the trees, casting soft shadows on the wooden patio table 🌞. The rustic Swedish countryside frames the scene in the background, making the simple yet hearty meal even more inviting.  

Looking at this picture now, I can almost smell the rich aroma of the dumplings and feel the comfort of being home. This dish is more than just food—it’s a tradition, a memory, and a taste of nostalgia. Sometimes, a single bite can tell a whole story.
