Ingredients:
- 400 g vegan mince, e.g., soy- or pea-based
 - ½ dl rapeseed oil
 - 1 tbsp chili flakes
 - 4 garlic cloves
 - 1 tbsp chopped ginger
 - 4 scallions, thinly sliced
 - ½ dl light soy sauce
 - ½ dl balsamic vinegar
 - ½ dl peanut butter
 - 2 tbsp granulated sugar
 - 1 tsp ground Sichuan pepper (optional)
 - 1 dl water
 
Serving:
- Noodles
 - 1 dl chopped peanuts
 
Instructions:
- Fry the vegan mince in a little oil until it gets a nice color. Transfer to a bowl and set aside.
 - Heat the oil in a frying pan. Sauté the chili flakes for 30 seconds until they release their aroma.
 - Stir in the garlic, ginger, and scallions. Let them cook until the scallions soften slightly.
 - Add the remaining ingredients along with the vegan mince. Mix well. Finish by adding the water and let it simmer for one minute.
 - Cook the noodles according to the package instructions. Serve with the mince mixture on top.
