Serves 2
150g peas (defrosted if frozen)
100g mangetout
100g sugar snap peas
130g feta cheese, chopped
2 ripe peaches, stoned and sliced
1 tbsp olive oil
A small bunch of fresh mint
1 small butter lettuce, chopped
Salt and pepper
Lemon juice
Bring a pan of water to the boil and blanch the peas (if fresh), mangetout, and sugar snaps for 2–3 minutes. Drain and cool quickly in iced water.
In a large bowl, combine the feta, peaches, olive oil, mint, and chopped lettuce with the cooled vegetables. Season to taste and finish with a squeeze of lemon juice before serving.
