Pea, Feta & Peach Salad



Serves 2

  • 150g peas (defrosted if frozen)

  • 100g mangetout

  • 100g sugar snap peas

  • 130g feta cheese, chopped

  • 2 ripe peaches, stoned and sliced

  • 1 tbsp olive oil

  • A small bunch of fresh mint

  • 1 small butter lettuce, chopped

  • Salt and pepper

  • Lemon juice




  1. Bring a pan of water to the boil and blanch the peas (if fresh), mangetout, and sugar snaps for 2–3 minutes. Drain and cool quickly in iced water.

  2. In a large bowl, combine the feta, peaches, olive oil, mint, and chopped lettuce with the cooled vegetables. Season to taste and finish with a squeeze of lemon juice before serving.
