Wok-Fried Spicy Garlic Celery: A Malaysian-Inspired Stir-Fry

Celery is one of those ingredients that seems to polarize people instantly. Many of us first encounter it raw, often cut into sticks and presented as a vehicle for dips like hummus or peanut butter. While there’s something to be said for its crisp, watery bite and subtle peppery notes when eaten raw, this humble vegetable often fails to shine in its uncooked form. But give celery a chance in the wok, and it transforms into something utterly magical. In Chinese and Southeast Asian cooking, celery is revered for its crunchy texture and ability to soak up savory sauces, making it a perfect base for bold flavors like garlic, soy, and chilli.

This particular recipe is inspired by a dish commonly served at large banquets in Malaysia, where plates of stir-fried greens and crunchy vegetables accompany more indulgent main dishes. It’s a dish that embodies balance: light yet deeply flavorful, crisp yet comforting, and extremely quick to prepare once you have everything in place. I often turn to this recipe when I need a plate of something vibrant, warming, and packed with umami—especially when I crave a bit of crunch to round out a meal.

Ingredients and Their Roles

  • Shaoxing Rice Wine (2 tbsp):
A classic ingredient in Chinese cooking, Shaoxing rice wine adds a subtle depth and complexity to stir-fried dishes. Made from fermented rice, it has a dry, slightly nutty flavor that balances well with salty and sweet elements. It helps tenderize vegetables slightly and adds a distinctive fragrance.

  • Light Soy Sauce (3 tbsp):
Light soy sauce is the backbone of many Asian stir-fry sauces. Lighter in color and saltier than its dark counterpart, it imparts a savory umami hit that enhances every component of the dish. Its saltiness balances perfectly with the sweetness of the sugar and the earthiness of the celery.

  • White Sugar (1 tsp):
A small amount of sugar helps round out the saltiness of the soy sauce and brings harmony to the dish. It subtly caramelizes during cooking, enhancing the sauce’s texture and adding a delicate sweetness that contrasts with the sharpness of the garlic and the heat of the chilli.

  • Vegetable Oil (2 tbsp):
A neutral oil is best for high-heat wok cooking, as it won’t interfere with the flavors of the sauce and aromatics. Vegetable oil heats quickly and provides an even base for stir-frying, ensuring the celery remains crisp yet tender.

  • Celery (1 bunch, sliced on an angle):
Celery is the star of this dish. Cutting it on the bias (at an angle) increases the surface area, allowing each piece to catch more sauce while still retaining its signature crunch. Cooking celery brings out its natural sweetness while preserving its fresh, grassy notes.

  • Garlic (5 cloves, finely diced):
Garlic is an essential aromatic here, infusing the oil and the entire dish with its pungent, warming flavor. Using a generous amount ensures the garlic remains prominent even when combined with strong soy sauce and chilli.

  • Cornflour Slurry (1 tsp cornflour + 3 tbsp water):
Cornflour (or cornstarch) slurry is the secret to creating that glossy, restaurant-quality sauce. It thickens the sauce just enough to cling beautifully to each piece of celery, creating a silky, cohesive finish.

  • Malaysian Crispy Prawn Chilli or Crispy Chilli Oil (1 tsp):
This finishing touch provides both texture and a powerful kick of heat. Malaysian crispy prawn chilli brings umami-rich depth thanks to the inclusion of fermented prawns, while crispy chilli oil is a great alternative for vegans, lending crunch and spice without any animal products. Either option infuses the dish with a bold, aromatic finish.

  • Salt and Ground White Pepper (to taste):
White pepper has a different heat profile than black pepper—milder and earthier, with a slight muskiness that complements Asian stir-fries beautifully. Salt is used sparingly here, mostly to balance the overall flavor once everything is combined.

Cooking Method: Step-by-Step

  1. Prepare the Sauce Base:
In a small mixing bowl, combine the Shaoxing rice wine, light soy sauce, and sugar. Stir until the sugar dissolves completely. This simple yet powerful mixture will serve as the backbone of your sauce.

  2. Heat the Oil:
Place a wok over high heat and allow it to get almost smoking-hot. Pour in the vegetable oil, swirling to coat the surface evenly. High heat is essential here; it ensures the celery cooks quickly while maintaining its crunch.

  3. Stir-Fry the Celery:
Add the sliced celery to the hot oil and stir-fry for about 1 minute. You’ll notice the celery becoming slightly translucent at the edges—a sign it’s starting to soften but still has a long way to go before losing its signature bite.

  4. Add Garlic:
Toss in the finely diced garlic and continue stir-frying for 2–3 minutes. The fragrance should become irresistible at this point as the garlic infuses the oil and begins to brown slightly around the edges. Stir constantly to prevent burning.

  5. Incorporate the Sauce and Thicken:
Pour in your prepared rice wine, soy, and sugar mixture. Quickly stir everything to ensure even coating. Next, give your cornflour slurry a final mix and add it to the wok. Continue stir-frying for another minute or so until the sauce thickens and turns glossy, clinging beautifully to the celery pieces.

  6. Final Seasoning and Chilli Boost:
Taste the dish and adjust seasoning with salt and white pepper as needed. Finally, stir in the crispy prawn chilli or crispy chilli oil, giving a few final tosses to distribute the heat and crunch evenly.

  7. Serve Immediately:
Dish up the stir-fry while it’s piping hot. The result is a wonderfully aromatic, crunchy, and savory dish that works beautifully as a side or even a light main course when paired with steamed rice.

A Few Variations & Tips

  • Vegan Version:
Simply use crispy chilli oil instead of Malaysian crispy prawn chilli. The dish remains vibrant and satisfying without any animal products.

  • Floral Twist:
For a slightly different aromatic profile, add thinly sliced ginger along with the garlic. This introduces a warm, floral dimension that’s equally delicious.

  • Protein Boost:
If you'd like to make this more of a complete meal, tofu or tempeh cubes can be stir-fried alongside the celery, adding plant-based protein and extra texture.

  • Make it a Meal:
Serve alongside a bowl of jasmine rice or soba noodles for a simple, satisfying meal that feels nourishing and full of flavor.

This dish, though simple, showcases how a few well-chosen ingredients and precise technique can turn everyday vegetables into something truly special. Whether you’re a long-time celery fan or a skeptic looking for a way to give it another chance, this spicy garlic celery might just win you over.

What if going to the theatre still felt like an occasion?

There’s something about the ritual of going to the theatre that I’ve always loved: meeting friends, grabbing a coffee, soaking in the excitement of a new production. This photo—taken 23 January 2025—captures exactly that. I’m sitting at Kafé Plattan, the vegan café tucked inside Kulturhuset in central Stockholm, wearing my black-and-silver sequin shirt from H\&M ✨. My friend Majsan and I met up there to catch up before heading to Stadsteatern for the dress rehearsal of *Stephen Sondheim’s COMPANY*.

If you’ve never been, Kafé Plattan is a great hangout: fully vegan, with tasty food, a relaxed vibe, and the bonus of being right by Stadsteatern 🎭. It’s my favorite pre-theatre meeting spot because it makes the whole evening feel special. And that night, I wanted to bring the sparkle—literally. Over the past few years, I’ve made a point of dressing up when I go to the theatre. There’s something about adding sequins or a bold outfit that reminds me: this is an *occasion.* And the best part? People notice. Strangers smile, ask about your look, and there’s a sense of shared celebration ✨.

The show? Well... let’s just say it didn’t live up to the sequins. COMPANY featured a female Bobby, and while that’s become a bit of a trend, I couldn’t help but feel it lost the essence of the story. What’s supposed to be about the universal search for connection felt reduced to a woman’s anxiety over her biological clock.

Sure, the cast was packed with top-tier musical theatre talent, but the production just didn’t gel for me—or for the broader audience, apparently, because it ended up closing early. Proof that even Sondheim’s genius can’t save a misstep in interpretation 🎶.

Still, I wouldn’t trade that night for anything: good food, a glittery outfit, deep conversation, and the thrill of seeing a show (even if it flops!).

I’d love to hear your thoughts: Do you dress up for the theatre? ✨.

A Day in My Life: Editing, Spicy Bánh Mì & Theatre Fails | Stockholm Vlog

A behind-the-scenes look at my REAL day as a content creator and influencer in Stockholm 🌟🎥—from digital hustle to spicy bánh mì and an unforgettable (for all the wrong reasons) theatre experience!

My day starts the same way it always does—editing 📲 yesterday’s Instagram Stories to make them ✨ready✨ for all my socials (YouTube, TikTok, Insta & beyond). I sit down with my coffee ☕, chop up video clips 🎬, polish them, and craft descriptions that (hopefully!) grab your attention. Then, like clockwork, I upload the oldest photo on my iPhone 📸 and erase it—it’s my fave way to keep my feed nostalgic but ✨always fresh✨.

After my editing session, it’s time to hop on my bike 🚲 and head into the heart of Stockholm to meet Martin. We’re trying Saigon Baguette 🇻🇳, a gem of a Vietnamese restaurant on Gamla Brogatan, famous for its authentic street food vibes and mouthwatering bánh mì 🥖. I arrive late (thanks, traffic 🚦), but spring is in the air 🌞, so spirits are high! Martin’s rocking his black sequin tux jacket and a white shirt 🤵, plus I’ve lent him my red and black tiger-stripe scarf 🐅 for extra flair. I’m in my signature bulky black bomber jacket, covered in black glittery stones ✨🖤, and my matching tiger-stripe bag 🎒.

The food? INCREDIBLE. Martin was a bit overwhelmed by the spice 🌶️ but loved every bite. We had a good laugh over it—and if you’ve never had bánh mì, you need to fix that ASAP.

Next stop: Stadsteatern for Jonas Gardell’s play “Pensionat Oskar.” I had high hopes... but wow. I absolutely *hated* it 🙈. The lights and set design? Gorgeous. But everything else? Total bore 🥱. Martin was more diplomatic, but let’s just say we were both ready for something stronger.

Cue our escape to Sidetrack 🍸, Stockholm’s oldest gay bar near Mariatorget. Sidetrack is iconic: laid-back during the week, buzzing on weekends, with great Swedish food 🍽️ and signature cocktails 🍹. We chilled with a drink and laughed off the weird theatre night. If you’re visiting Stockholm, this bar’s a must-visit 🌈💫.

What if... my best theatre nights always started with vegan kebab?

On January 21, 2024, a crisp Stockholm evening 🌆, I biked over to Le Kebab (Upplandsgatan 51, near Odenplan 🚲) for a pre-show dinner that honestly deserves its *own* standing ovation. On my plate? The dreamiest vegan kebab you can imagine: sizzling strips of seitan, crispy fries, rich and creamy vegan cheese sauce, juicy pomegranate seeds, slivered red onions, and a fresh, crunchy salad 🥗🌶️🍟.

And the reason I was carb-loading? I was about to see the *first preview* of the Swedish production of *Dear Evan Hansen* 💙 at Oscarsteatern! Sitting with me at dinner were Lisa (our backstage production superstar 👏) and my friend Martin, who’s produced a few incredible shows himself 🎭. There’s nothing like the shared buzz of theatre people getting ready for something *big*.

Quick facts about *Dear Evan Hansen*:

🎶 Music & Lyrics: Benj Pasek & Justin Paul

🎭 Director & Swedish translation: Markus Virta

🎙️ Cast:

- Evan Hansen: Martin Stokke Mathiesen

- Zoe Murphy: Clara Henry

- Jared Kleinman: Joel Adolphson

- Larry Murphy: Peter Eggers

- Cynthia Murphy: Anna Maria Hallgarn

- Heidi Hansen: Sussie Eriksson

...and many more!

💡 Production credits include Nils-Petter Ankarblom (musical direction), Marcus Englesson (set design), Palle Palmé (lighting), Oscar Johansson (sound), and Maria Felldin (costumes).

The performance? Absolutely electric ⚡—hard to believe it was just the first preview. It felt polished, heartfelt, and powerful.

Ready to turn your tiny apartment into a creative paradise? 🌿✨

Ready to turn your *tiny apartment* into a creative paradise? 🌿✨ In today’s video, I’m taking you through my full day as a content creator & theatre dresser in Midsommarkransen, Stockholm—a suburb with BIG vibes! 😄🎭

We start the morning with my daily *ritual*: editing yesterday’s Instagram stories 📱 into a polished reel 🎬 for all my social platforms (Instagram, TikTok, YouTube—you know the drill 😉). Once that’s done, I head over to my laptop 💻 to upload the video, write detailed descriptions ✍️, and keep my favorite quirky tradition alive: I always upload & then delete the oldest photo on my iPhone 📸❌—a fun way to stay fresh & nostalgic all at once!

Next, it’s time to *prep my balcony* for Swedish summer ☀️🌸. First up: hanging fairy lights ✨, sipping my much-needed coffee ☕️ (paired with a PB&J tortilla—yes, it’s a thing 😂), and then draping faux wisteria garlands everywhere. Here’s my thrifty secret: every time the theatre where I work tosses fake plants 🌿, I *dumpster dive* to save them & give them new life on my balcony 🌱♻️. Nothing says sustainable decor like second-hand plastic flowers!

Once the balcony is gleaming, I tackle my *kitchen chaos* 👨‍🍳. I organize my pantry to look like a grocery store 🛒, splitting everything into Europe 🇮🇹 (lots of Italian staples!), Asia 🌏, South America 🌎, and the Middle East 🌙. Finally, I celebrate by cooking up some *vegan Asian fried crushed boiled potatoes* 🥔🔥—crispy, savory & SO satisfying.

Whether you're here for *vegan cooking inspiration*, *small space organization hacks*, or a peek behind the scenes of Stockholm theatre life, this vlog’s packed with tips & laughs! I’m Joakim Clifton Bergman, a dresser & costume supervisor sharing my daily life as a vlogger, vegan foodie & theatre lover.

Korean Cucumber Salad (Oi Muchim)

Great choice—Korean cucumber salad (Oi Muchim) is super fresh, crunchy, and easy to make! Here’s my favorite version that’s vegan, simple, and packed with flavor.

Korean Cucumber Salad (Oi Muchim)

Ingredients:

  • 2–3 small Persian cucumbers (or 1 English cucumber)

  • 1 tsp salt (for sweating the cucumbers)

For the dressing:

  • 1 tbsp gochugaru (Korean red pepper flakes) 🌶️

  • 1 clove garlic, minced 🧄

  • 1 tbsp rice vinegar 🍚

  • 1 tsp soy sauce 🥢

  • 1 tsp toasted sesame oil 🌿

  • 1/2 tsp sugar (or maple syrup for vegan option) 🍁

  • 1 spring onion, finely chopped 🌱

  • 1 tsp toasted sesame seeds (plus extra for garnish) ✨

Optional:

  • A few thin slices of fresh red chili for heat 🌶️

  • A dash of freshly cracked black pepper

Method:

  1. Slice the cucumbers thinly (about 3 mm) and place them in a bowl. Sprinkle the salt over the slices, toss well, and let sit for 15 minutes. This draws out excess water and keeps them crunchy.

  2. After 15 minutes, rinse the cucumber slices under cold water and gently squeeze out excess moisture. Pat dry with a clean towel.

  3. In a large bowl, mix together all the dressing ingredients: gochugaru, garlic, rice vinegar, soy sauce, sesame oil, sugar (or syrup), spring onion, and sesame seeds.

  4. Add the cucumber slices to the dressing and toss well until everything is coated evenly.

  5. Taste and adjust seasoning—add more vinegar for tang, or more gochugaru if you like it spicier.

  6. Garnish with extra sesame seeds and chili slices if using.

  7. Serve immediately for max crunch, or chill it in the fridge for 10–15 minutes to let the flavors meld. 🍽️

Best served with: bibimbap, BBQ tofu, or as a fresh side to any Korean-inspired meal!

Are you planning it as a side dish or the main part of a bigger meal? 😊

You know that magical moment when a *small win* feels like you’ve conquered the world?

You know that magical moment when a small win feels like you’ve conquered the world? That was me on January 15, 2025, when I finally stood back and admired my perfectly organized sunglass collection in my Midsommarkransen apartment 😍.

Let’s rewind: a few years back, during the run of TOOTSIE, I became totally hooked on second-hand shopping. Apps like Sellpy, Vinted, and Vestiaire Collective became my daily scroll, and I focused almost exclusively on pieces from H&M’s designer collabs—whether it was H&M Studio or the Circular Design Story 🌿👓. My wardrobe? Gloriously full. My sunglasses? Piling up FAST.

Problem was—I wasn’t wearing half of them because they were hidden away. I realized early on: if I don’t see it, I won’t wear it. So began my quest for the perfect display. I browsed Temu, considered cutlery organizers from IKEA (which sadly had slanted sides—fail), and searched high and low for clear plexiglass options.

Finally, I found picture ledges from IKEA—minimal, chic, and exactly what I needed. I lined up five of them next to my bathroom door…but disaster struck. IKEA discontinued them. Enter: my friend Magnus (hero 💫), who handed over two extras he had at home. I mounted them, but still had space for one more. I searched everywhere—online, second-hand, you name it. No luck.

Then one day, standing in my kitchen, I stared at my spice rack—and had a eureka moment. It was the exact same shelf. My sunglass wall was complete! To top it off, I found super cheap plexiglass mirrors at IKEA that fit perfectly between the ledges, giving my collection that extra sparkle ✨.

In the photo, you’ll spot eight picture ledges holding my collection—three pairs of sunglasses per shelf, with some in their original cases. Peeking in the mirror? That’s me, proudly sporting my IKEA bathrobe 😄. Up top? My Lucie Kaas kokeshi dolls: Anna Wintour, Frida Kahlo, Karl Lagerfeld, Coco Chanel, and Audrey Hepburn as Holly Golightly—my ultimate style icons keeping watch.

It’s funny how a simple home project can bring so much joy (and serious practicality). Do you have a favorite DIY home hack? Drop it in the comments 👇 and don’t forget to subscribe for more style + storage inspo!

HOW I GOT NO WINE BUT GREAT LAUGHS
