Welcome back to another episode of "What's Cooking, Good Looking?" Today, I'm bringing you a mouthwatering and totally vegan recipe – Mercimek Köftesi, aka Lentil Balls. But these aren't your ordinary lentil balls; they're packed with flavor and perfect for hot summer days.

In this series, we explore scrumptious vegan recipes that not only tantalize your taste buds but also align with a compassionate and sustainable lifestyle. As a gay vegan man living in Sweden and working at a musical theater in Stockholm, I'm all about embracing diversity and inclusivity, whether it's through the arts or the food on my plate.

So, let's get cooking! Here's what you'll need to whip up about 30 small lentil steaks:

Ingredients:
- 4 dl red lentils
- 7-8 dl water
- 1 bouillon cube of any variety
- 2 dl finely ground bulgur
- 1 yellow onion
- 1 dl rapeseed oil
- 3 tbsp tomato puree
- 1 tbsp paprika puree (or 1 tbsp tomato puree + 2 tsp paprika powder)
- 1 tbsp ground cumin
- Dried and ground chilies (as per your preference)
- 2 tsp salt
- 0.5 tsp black pepper
- 4 green onions
- 1 bunch finely chopped parsley

Method:
1. Boil the red lentils with water until fully cooked. Stir and lightly mash the lentils as they cook, then let them cool.
2. Add bulgur to the lentil mixture.
3. In a separate pan, sauté finely chopped onion in rapeseed oil until soft. Add tomato and paprika puree, season with cumin and optional chili.
4. Combine the lentil mixture with the spice mixture, adding salt and pepper. Knead into a smooth batter, adding olive oil if necessary.
5. Mix in the green onion and parsley.
6. Shape the batter into oblong steaks and arrange them on a bed of romaine lettuce leaves.
7. Garnish with lemon wedges and, if desired, drizzle pomegranate syrup for a tangy twist.

Serve these lentil steaks as a main course with lemon wedges, veggies, and a side of vegan tsatsiki or enjoy them as a flavorful side dish.
