Baba Ganoush with a Twist: Eggplant, Lemon, Sambal Olek, Garlic, and Tahini

Ingredients:

- 2 large eggplants
- 3-4 cloves of garlic, minced
- 1/4 cup tahini
- Juice of 2 lemons
- 1-2 tablespoons sambal olek (adjust to your spice preference)
- Salt, to taste
- Olive oil, for garnish
- Fresh parsley or cilantro, for garnish

Instructions:

1. Preheat your oven to 400°F (200°C). 

2. Wash the eggplants and prick them with a fork a few times to allow steam to escape during roasting.

3. Place the whole eggplants on a baking sheet or directly on your oven rack. Roast them for about 45-50 minutes or until the skin is charred and the flesh is soft.

4. Remove the eggplants from the oven and let them cool for a few minutes. This will make it easier to handle.

5. Once the eggplants are cool enough to touch, peel off the charred skin, leaving only the soft flesh. Place the eggplant flesh in a strainer for a few minutes to allow excess liquid to drain.

6. Transfer the drained eggplant flesh to a food processor.

7. Add minced garlic, tahini, lemon juice, sambal olek, and a pinch of salt to the food processor with the eggplant.

8. Blend the mixture until it becomes a smooth and creamy puree. You may need to stop and scrape down the sides of the processor bowl a few times to ensure all ingredients are well combined.

9. Taste the baba ganoush and adjust the seasoning, adding more lemon juice, sambal olek, or salt to suit your taste.

10. Transfer the baba ganoush to a serving dish and create a well in the center with a spoon.

11. Drizzle a generous amount of olive oil over the top, and garnish with fresh parsley or cilantro.

12. Serve your unique baba ganoush with pita bread, crackers, or fresh veggies for dipping. Enjoy!
