In this funny and entertaining video, I start the day by editing videos for Instagram, TikTok, and YouTube. Then, I dive into the kitchen to make a delicious vegan zucchini dish.
Pasta salad with vegan dumplings is both simple and tasty! Serve tortellini with shaved zucchini marinated with capers, oil, and lemon, and top with mint and pumpkin seeds. A salad that's just as good cold as warm.
Ingredients:
- 1 zucchini (about 250 g)
- 3 tbsp olive oil
- 3 tbsp capers
- 1 tbsp finely grated lemon zest
- 1 tbsp freshly squeezed lemon juice
- 1/2 tsp salt
- 2 pinches of black pepper
- 500 g frozen dumplings
- 1 1/2 dl shaved vegan parmesan
- 1 dl picked mint leaves
- 1/2 dl roasted pumpkin seeds
Instructions:
1. Shave the zucchini thinly. Mix with oil, capers, lemon zest and juice, salt, and pepper. Let it marinate for 15 minutes at room temperature.
2. Cook the dumplings according to the package instructions.
3. Mix the dumplings with the marinated zucchini. Fold in the vegan parmesan, and top with mint and pumpkin seeds.
In the afternoon, my friend Martin invites me on a trip with his boat. We enjoy the freshly cooked zucchini and dumplings, talk, and swim in Lake Mälaren. It's a wonderful memory!
